How would I go about stopping the said pipes from sweating and leaving droplets of water on the surfaces under the sink please ? I had thought that there was a leak but there isn't one. The strange thing is that this occurance only occurs in the morning after the hot water has been used.

isn't this just condensation of cool air against hot pipes, and would be solved if you just insulated the pipes ?

That doesn't sound right to me.
Isn't condensation caused by cooling?
i.e. Where warm air condenses on cool pipes?

Spray some anti perspirant on them.

So if it's not water vapour from ambient air causing the issue it's either a leak or mice with super soakers I guess.

Cannot find one on the pipes anywhere and it was fine when I last used it.

If it's hidden pipe work just use foam on the pipes, if it's exposed you could try lighlty greasing (vaseline sp) or applying tape (speak to a plumber for the correct type) to the taps.
