Depends on what you are trying to measure I suppose. If you want an idea of how many people turn up regularly then it makes sense to remove the statistical outliers from the equation.
In the context of revenue then the average is fairly irrelevant I'd have thought, its the total number of punters through the gates that matters regardless of what game they attended.

The average is the total number of people through the gate divided by the number of games so its completely relevant isn't it.
