Because Yeaman is only really comfortable playing on the left, whereas Crooks has shown an ability to play both sides. Now given they're our only two fit centres, where would you play them? Yeaman plays, he should play left.

It's obvious what he meant: Gentle puts two pieces of paper with the words 'left' and 'right' on them into a hat, and Yeaman pulls one of them out to determine where he plays.
