O RLY?
I love Goodfellas, probably in my top 20 or so, but I think the openings of Apocalypse Now and Once Upon a Time in the West are very hard to beat. Also, the opening of Aguirre, Wrath of God, while being stylistically raw, is also brilliant.
You also left out my favourite moment during that Goodfellas scene in your description. Just before they pop the boot and the camera is panning across the three, you see Pesci grabbing something inside his jacket. Just before he goes out of screen, we see him pull out a bloody huge kitchen knife, and then he goes out of sight. I just love the timing of it.
My favourite scene in the movie is that long, one-shot, tracking club scene. Where Liotta takes his girl from the street, through the kitchens and back rooms, to the front of the dining room where his table is made up in front of him.

All of which shows that Scorsese is god.
