Bean, Tomato and Garlic Casserole

1 Tbsp Olive Oil
1 large onion, sliced
6 large cloves garlic crushed
1 lb fresh ripe tomatoes mashed
1/2 cup white wine
2 tbsp tomato puree
1 tbsp red wine vinegar
2tspn honey
2 tins mixed beans
Lots freshly ground black pepper


Heat oil in frying pan, over medium heat andd onions and stir until soft. Add (good quality garlic (Indian and Continental on Princes Ave does excellent strong garlic, Danny, ask Willie)) and stir for 30 seconds.

Add tomatoes, wine and tomato puree bring to boil and boil for 5 mins. Stir in vingear and honey.

Put the lot into a casserole dish, stir in beans and black pepper add salt to
taste. Bake in oven 180deg C for 30 minutes.


If Washy serves that up to his missus for dinner tonight he'll be on the plane tomorrow morning, guaranteed.

Mine had sheperds pie made with veggie mince and stacks of Worcester sauce....for our 2nd one I made her eat pattie and chips after a good rodgering....take your choice.
