I guess that the fact these players are signing up for only one year, is the club covering itself incase we get relegated next season. It makes sense, in that if we do go down and we wanted to keep them, it would be on reduced terms.
It also suits players like James Cunningham who, if he has a good season next year can go off to another club on a better deal.

SL contracts are null and void upon relegation. Anyone signing now will be on a SL contract, hence the 1yr deals make no difference really.

Eloi Pelissier has signed for a year. I personally think good news as we may need Cunningham and fozzard as back up halves? I know some fans are not so keen, but I think a good addition.

I would imagine its quite difficult to sign big names on one year contract. I remember listening to Beaumont the Leigh chairman who said his high salary players wanted 2 years. This resulted in them struggling financially as they planned for a top 4 slot and the income that comes with that.

I'm pretty sure there's a standard SL contract and it becomes null and void upon relegation.
