For those who are any good at French train timetables, are there any trains at 11-12ish in to Limoux from Carcassonne on matchday?

10-50am Carcassonne to Limoux arrives 11-17am April 17.

A word of warning regarding travel from Carcassonne to Limoux on the day. There are two trains; one at 10.50 and the next at 12.34; After that, there is a bus (also from the station) at 13.02 and that's it! The next train won't be until 16.12, which means you'll miss the first half if you're not careful. The journey takes about 30 minutes.

are we better buying our train tickets online or just pay on the day (the same for us getting from Toulouse to Carcassonne)

Sometimes there are better deals if you buy in the UK for French trains. But these distances are so short it shouldn't make difference. Buying tickets at the station is dead easy.

Some trains though (the TGV for example) are reservation only so depends on which train you want to take.
