I think you'll find the proper way to cook chips is to fry them twice, definitely what you'll see in Belgium where they almost worship the frites.

Someone mentioned Cornwall..... The best Fish and Chips I ever consumed were from Polperro but that was a few years ago and it could well be a Chinese now. It was Elsies or Eileens....or something beginning with E anyhow.
