The main bars in the centre of Perpignan will be open Easter Sunday, (they won't miss out on cashing in on their annual Rhinos fixture) but there isn't that many to choose from.
Your best bet is to get on the bus to Canet Plage. 2 Euros on the bus and takes about half an hour. Perpignan at Easter is pleasant but still quite cool, so don't think you'll be drinking beers on the beach, but it's a great day out.
