I did get told off once when I blogged about Lancashire hot pot – my recipe uses lamb's kidney and I was told that the dish never uses it. In fact, the recipe came from a book of Lancashire cookery by a Lancastrian: the point with many of these dishes is that there are probably as many versions as there are people who've ever cooked it.
